Morning Glory Muffin

Preheat oven to 175 °C

In a large bowl, mix together all purpose flour, sugar, baking soda, cinnamon and salt. When combined, stir in carrot, nuts, and raisins.

In a separate bowl, beat together eggs, oil, and vanilla. Then, pour these wet ingredients into dry ingredients bowl and stir until combined. Scoop batter into prepared muffin cups.

Step 4

Bake in preheated oven for 20 minutes, or until a toothpick inserted into center of a muffin comes out clean.
